Espresso drifts through the day as the grind and the beans change with humidity and use. Checking and adjusting it repeatedly is the difference between the first cup and the hundredth tasting the same.

Events are a capacity problem. Demand arrives in bursts around the schedule, so the setup and the staffing have to be planned for the peak rather than the average, or the queue simply gives up.

And allergens deserve a straight answer. A shared setup handling milk, soya, nuts and gluten can't promise zero traces, so we say what's in the drink and let people decide.
